Low carb pizza in a snap!
This was so delicious! These sandwich thins are 4 net carbs per roll. These little pizza have a few carbs but a lot less than actual pizza and you can make it as tasty as you like! Here’s what I did.
Oven heated to 350. Spread tomatoes paste on the halved sandwich thins. Added cheese (as much as I could fit) lol Topped that with pepperoni! And onions and a few mushrooms! I baked them for about 6 to 8 minutes just to warm them up! They were as delicious as they are beautiful!!! Until next time!

Low Carb weight loss update – 2 months
At 9 days into low carb eating I was down 7 lbs. Keeping that first loss off is really the 1st milestone because… a lot of that loss, could be water in the beginning. Though it is a huge motivator to loose that much so quickly, it would be easy to gain back if I would have ended my journey there.
Today I am 9 WEEKS into my journey. I have had a carb filled treat here and there…. I always made it a conscious decision though, and brushed it off – moved forward and kept on my own carb plan. These things will happen! I have allowed myself to Enjoy the brief moment and move on.
One thing I can attest to is, feeling really crappy the next day after a big cheat! And the pain of having to battle cravings again for a few days. IF I cheat I know this is coming …. So I embrace the recovery days and get back ON plan!
Anyway, 9 weeks in brings me to 12 lbs lost! I have been at 12 lbs for quite a few days so I know another loss is coming. I have started to feel it in my body before the scale moves. Like today everything feels loose and roomy, my pants and my hoodie! It’s a great feeling.
It’s not fast. But there are many factors to consider. I take medication that I think would be all wacked out if I were to loose weight quickly. I think slow loss gives my body and it’s medication time to adjust. This is something that I spoke to my doctor about because… I’m looking for total body health not just weight loss.
You should always seek your health care provider before starting any weight loss program.
I started wanting to loose 46 lbs.
Now, I want to loose 34 more!

Easy low carb sandwich spread!
One of my childhood favorites! I remember it being made with Bologna but this, I made with ham. I suppose you can use either. I started by putting ham in my food processor.
Then I added dill pickles and celery to the food processor.
I also snuck in a few of these bread and butter pickles. (Even though they have a few carbs, the flavor needed it)
Everything is all processed and I added mayo … Not measured… Just until the taste was right. I also added a packet of artificial sweetener.
It was almost as good as I remember, and it made a great low carb lunch or snack!!

Strawberry Low Carb Smoothie – Quick Easy Delicious ❤️
I love low carbing. My body feels better. Less congested… I feel it in my waist a lot even though the scale isn’t always as showing as I’d like it to be.
This is a delicious snack when you need SOMETHING!
I put 1/2 cup strawberries – 1 cup almond milk – 2 pkt sweetener of choice. I blended it in my mini food processor until shake / smoothie consistency and poured it over ice! 6 net carbs. Just over 50 calories. Lots and lots of delicious self indulgence for no guilt ( depending on who you are lol) -
I feel like I hit the low carb/keto lottery!
I love grilled cheese! I love fried egg and cheese sandwiches!!!
Stopped by our local discount bread store and found these!
Keto Hamburger and Hotdog buns and Sandwich thins! I made this sandwich with the thins, they are very soft. I usually eat my hamburgers and hotdogs without buns , but this will be treat for the holiday weekend without having too many carbs. It was delicious and 7.8 carbs total! Until next time!

Low carb Root Beer Float!
This is a Life saver for me when I am craving something. Or when everyone else is having a treat! We went to the drive in the other evening, and we had plans to stop and get the family malts to take with them from the ice cream shop. I my ingredients with me in a little personal cooler and made my float at the drive in. I know that I enjoyed it as much as they did their malts!! Maybe more!!
So delicious! Zero carbs in the root beer and only 1 carb in 2 tbsp half and half!! Pour it over a glass of ice and enjoy! I have this often. Absolutely guiltless! I know that pop isn’t really good for you. For my health though, I believe it beats the high sugar alternatives and satisfies my cravings for something special!

Low carb Turkey wrap
This was quick and easy!
These low carb wraps are on the smallish side more like taco size than burrito size, but perfect for this quick lunch wrap!
I put 2 tbsp cream cheese on the wrap and microwaved it for a few seconds so it would spread easily. Added shredded cheese, onions and 2 slices of turkey and microwaved again for about 20 seconds. You can add spices if you like…or maybe chopped celery or avocado!!!
Very quick and easy, especially if you need a quick on the go meal!
