Mozzarella Chicken Low Carb Deliciousness!

My niece and Godson came to visit today! She’s due to deliver her newest baby in the next few weeks. I wanted to make her a special dinner during her visit, so I made Mozzarella Chicken! It is seriously one of the best ways to have chicken and totally low carb.

How to:. I used 5 lb of boneless skinless chicken breast. 1.5 pounds of shredded mozzarella cheese. Three whipped eggs for coating the chicken. Oil for frying or butter if you prefer, I use butter. Two of the lowest carb cans of either.. cream of mushroom / cream of chicken soup you can find. Three cups of chicken broth, I use low sodium. Some people top with mushrooms but I don’t see the need 😉.

Slice the chicken up into small individual strips. Heat a large fry skillet with butter or oil. Coat each piece of chicken in the whipped eggs. Brown the chicken on both sides in the butter or oil. Place the browned chicken in a single layer of an oven safe casserole dish or bake pan. Pour the chicken broth over the fried chicken and place the pan of chicken and broth in a 350 oven for approximately 30 minutes. Carefully remove the big pan from the oven after 30 minutes and top with the shredded mozzarella cheese. Place the pan of chicken with the mozzarella cheese on top back in the oven for approximately another 20 minutes. The broth will be all bubbly and the cheese will be brown on top. Always double check the internal temperature of your chicken to make sure of it’s doneness. This is a super delicious low carb meal that even carb eaters will be on board with! No need to cook two meals tonight 😃

I made potato wedges as a side dish for the carb eaters today. I snuck 3 Wedges, I shouldn’t have… but Ya.
And I made this green bean casserole.
I went for a walk with my godson and we saw this… Caterpillar of some sort. It was huge and it was beautiful bright green and I was totally in awe of it! I have no idea what it was.
